Coming from the femur of cows, the bones are center cut to provide uniform portions that expose the marrow, making it easy to roast in the bone or extract prior to cooking. Each case also comes with 24-28 pieces on average, which weigh about .75 lb. each and are approximately 2" to 3" in length. Minimally processed, these bones come ready to thaw, season to your liking, and roast. To roast, preheat your oven to 450 degrees Fahrenheit and roast the bones marrow-side up until it softens and begins to pull away from the bone.

Order arrived at near room temperature due to insufficient dry ice being used for the shipment. Of what was received, one third of the bones were not canoe cut, and one third of which were too small to be used for roasting purposes. Of the good bones received, at least three of which look like they were stomped on by a boot. I'm not even sure if these are going to be safe to eat. Very disappointed with what I received.
